Potato Cheese Casserole

2 pounds hash browns or shredded potatoes
3/4 cup melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 cup chopped onions
1 can cream of mushroom soup
1 pint sour cream
2 cups shredded cheddar cheese
2 cups corn flake crumbs

Combine potatoes with 1/2 cup butter. Season with salt and pepper. Add onions, soup, sour cream and cheese. Blend and pour into 9 x 13 baking dish or 3 qt. casserole. Mix remaining butter with corn flakes and sprinkle over potato mixture. Can be stored in refrigerator before baking.
(Diced chicken or ham may be added for a meat dish.)

Bake at 350 degrees for 45 minutes.
