Vegetable Soup

From Mom

3 lbs. soup meat
2 qts. water
2 TBSP salt
Boil together until done. Cool and take meat out and cut into small pieces. Add water until pan is 1/2 full and add 3/4 cup uncooked rice or barley, 1 bunch celery, cut up, 1 large onion, cut up. Add meat and simmer. May add diced potatoes, corn, lima beans, or other vegetables, if you want. Better if you let set overnight or for a while.
