Zucchini Bread




From Nancy

3 eggs - beat well
Add 2 cups sugar and 3/4 cup oil
Mix into sugar:
2 cups flour
2 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
3 tsp. cinnamon
3 tsp. vanilla
And lastly, add 2 cups shredded zucchini (peeled)
1 cup walnuts

*If zucchini are too watery, add 1/4 cup or more flour. I often do!

Bake at 350 degrees for 45-60 minutes. I often bake this in 2 loaf pans so the center gets done!

1 large zucchini will yield 2 cups.
