Stuffed French Toast with Strawberries



4 slices white or whole wheat bread (1 inch slices)

4 oz. light cream cheese, softened
3 TBSP strawberry fruit spread

2/3 cup milk

2 eggs

1 tsp. sugar

1 tsp. vanilla

1/2 tsp. cinnamon

2 cups fresh strawberries

2 TBSP powdered sugar
Cut bread slices in half crossways (triangle)
Using a sharp knife make a horizontal slit in each slice (like a little pocket)

In a medium bowl, stir cream cheese and fruit spread until smooth.
Spoon 1/8 of the mixture into each bread pocket and pinch edges together to close.
In shallow bowl, whisk together milk, egg, sugar, vanilla, and cinnamon.
Dip filled slices in egg mixture and roll to coat.
Place on hot griddle for about 6 minutes or until golden brown.
Top with strawberries and powdered sugar.
