Fiesta Chicken Kiev

8 boneless chicken breasts - pound with mallet to flatten each one
3 TBSP margarine
1 jar Old English Style Cheese Spread (Kraft)
2 tsp. dry minced onions
3 tsp. chopped green chillies (optional)
1 tsp. Lowry's Seasoned Salt
1 pkg. taco seasoning
1 cup cheddar cheese crackers, finely chopped
4 TBSP melted butter
Beat together margarine, cheese, onion, chillies and Lowry's. Combine taco seasoning and cracker crumbs, in separate bowl for coating. Take each chicken breast and put 1/8 of cheese mixture into each. Wrap carefully and hold with toothpicks (try to wrap so the cheese won't run our - sides first then roll it). Dip each breast in butter and roll in crumb mixture. Arrange in
9 x 13 dish. Cover with paper towel and microwave on HI for 10-12 minutes. (7-9 minutes for 4 breasts.)
Serve on lettuce leaves and garnish with tomatoes and ripe, black olives.
