Mocha Marshmallow Cookies

Ingredients
1 (10-oz.) bag bittersweet chocolate chips, divided
½ cup butter, softened
1 cup sugar
1 tsp. vanilla extract
2 eggs
1 ½ cups flour
1 tbsp. finely ground Coffee
½ tsp. baking powder
1 ½ cups mini marshmallows
Preparation
Place half the chocolate chips in a medium-size microwave safe bowl.
Microwave on HIGH for 1 minute or until almost fully melted, stopping to
stir once or twice. Stir until melted and set aside to cool.
Stir together butter and sugar in a large bowl. Add vanilla and eggs and
mix well. Stir in flour, coffee and baking powder, then melted
chocolate, remaining chocolate chips and marshmallows. Cover and
refrigerate for at least 1 hour.
Preheat oven to 350°F and
lightly grease or line 2 baking sheets with parchment paper. Place cold
spoonfuls of dough onto baking sheets and bake for 10 to 12 minutes.

Makes 1 1/2 dozen
